Cooler 1 Has Begun

How is everyone doing so far on the Cooler 1 Challenge that I mentioned on Friday?

I'm going to give you a peak at what I'll be eating every day for the next 2 weeks (and 2 weeks only). My meals won't vary much at all because this is very tight eating. I will also post a new meal each day (hopefully) with a picture for some added interest.

It's hard to eat this strictly... but we can do it!!

Come on Makeover Challengers (and anyone else joining us)!! Only a few weeks left!

7:00 a.m. – 1/3 cup dry oatmeal (2/3 cup cooked) topped with 2 tablespoons ground flax seed, 1 tablespoon bee pollen and 1 tablespoon wheat germ; 6 egg whites scrambled or boiled; 1 cup green tea; 1 liter water

9:30 a.m. – 6 oz lean grilled chicken breast; ½ cup raw veggies – cucumbers, radish, green beans or lettuce leaves; 500 ml water

Noon – 1 ½ cups mixed salad greens with 3 radishes and 4” piece of cucumber cut up; no salad dressing only lemon juice; 1 cup water packed tuna; green tea; 500 ml water

2:30 p.m. – 6 oz. lean grilled chicken breast; ½ cup raw veggies – cucumbers, radish, raw asparagus and green beans or lettuce leaves; 500 ml water

Dinner – ½ cup brown rice; 1 cup steamed green veggies – broccoli, green beans, asparagus, spinach; 6 oz white fish grilled or baked dry; 500 ml water

I'll do it with you! I look forward to starting the new year with no regrets and spending Christmas day watching my babies open gifts not worrying about how my sweater fits.

Find a reputable bike shop in your area and talk to someone who is either a road cyclist and/or triathlete. If you can afford several thousand dollars, you'll want the bike to be professionally fit to you to prevent back, knee hip problems. There are too many brands to name. My advice would be to get a road bike first, then add tri bars later if you continue to go longer distances. Then you can use the same bike for road cycling as well. Learning to get in and out of the pedals w/cycle shoes is one thing, you don't want to add dropping right down into tri bars when you are just learning to get out of your clips. Plus getting used to riding in such an aggressive position takes time (ie balance and back aches). When you do longer distances the tri bars can help take time from your bike split. Pick up a Triathlete or Inside Triathlon and a Cycling magazine to see the difference between the bikes. Think Lance Armstrong on his climbing road bike versus his time trial bike when he wears the funny helmet. Hope this helps!

Here is a challenge for you...I would love to see you eat vegan or at least, vegetarian on Cooler 1. Something to think about.

I have tried bee pollen and can't seem to get used to the taste or the yellow color in my oatmeal. Is there anything else you can recommend as a replacement? I haven't tried Salba. Thanks!
