Challenge Day 6


I arrived home safely from Portland late last night and was greeted by the bitter Canadian cold. My hubby was up at 6:30... and so was I. Adjusting to a time change is always a little rough. I'll be taking extra special care of myself today by loading up on veggies and soothing teas.

I am visiting Franca today to get all prepped for the Arnold. We leave Thursday!! We're taking a bus to Columbus, Ohio because every other year we've been faced with major airport delays and canceled flights due to nasty weather.

I've included a few more pics from my Portland experience. The first one is at Bob's Red Mill - an Oregon classic. Do you have these products in your grocery store? I use their grains all the time. This weekend my daughter and I made their gluten-free pancakes and their gluten-free bread. Delicious!! Check them out if you haven't tried them yet. My daughter and I also had a delicious meal at Andina, a Peruvian restuarant.

P.S. For those of you who are joining me on this Cooler 1 quest, I hope you enjoying yourselves and taking care of yourself, too. Listen to your body and give it what it needs. You'll notice Cooler 1 is very challenging... this is exactly why it is NOT to be used for longer than 1-2 weeks at a time. It's hard on your body. If you don't feel you can do it than stop.

Tosca, I made your banana bread last night and I must say...DELISH! My kids are enjoying it. The recipe has just the right amount of everything and the raisins add the extra sweetness for my sweet tooth.

Thanks for a great recipe. Others should definitely try it!

Cooler One is challenging. I opted in last week and while I haven't been perfect with it, Ihave done pretty good and am still hanging in there. While I do feel a little sluggish on the energy scale, I feel really good inside. I don't really know how to explain that other than to say it feels like everything is really working efficiently...It just feels good! Thanks Tosca for all the support and insight into your world and paving the path for all of us to follow. You are awesome!

I can't wait for the "Arnold" this weekend. It's my first time going there...even though I've lived here in Columbus my whole life! I hope I get a chance to meet you. While I've been struggling with eating clean and being active lately, I never tire of reading through your books or magazine articles for much-needed inspiration. :)

Oh My Gosh! I can't believe you got to go to the Bob's Red Mill store! I have to eat gluten free and their flours are the best! Anyway, I am SO SO SO SO excited at the moment because my husband finally agreed to join a gym. I am like jumping up and down!!!!! He agreed to work out with me. He is about 90lbs. overweight so this is HUGE! The only problem is, I have NO idea where to start. I have never worked out at a gym with real weights and machines. You have encouraged me not to be afraid of heavy weights(through e-mail) but what does that mean. How do I know what to start with? I'm excited and scared all at the same time! Any suggestions? Thanks a bunch:)Have fun at Arnold!

OMG, I love Bob's Red Mill. I have at least two bags of their food in my pantry right now.

And irritation from lack of carbohydrates must be kicking in, because I'd give my eye teeth right now for the two men in my office to stop yapping with each other and SHUT UP. I thought women were supposed to be the non-stop gabbers.

I started Cooler #1 later and this is day 2 for me. It is very challenging but I'm just taking one day at a time. By the end of the night I feel tired but wake up refreshed in the morning. Thanks for all of your insight, it is very helpful to me.

You and your daughter look like sisters! I thought the photo of the Andina restaurant was you until I enlarged it to read the sign and realized it wasn't you!! lol Love the other photos, I am also a fan of Bob's Red Mill products. That's pretty cool you got to check out the factory. What's peruvian food like? I have never tried.

Tosca-You will be happy to know that tomorrow in Columbus Ohio it will be 57 degrees and even warmer on Friday! Hope you enjoy the weather and Arnold. I have lived here my whole life and have never went. My goal will be to go next year! Wish I could meet you-you are a life changer.

Hi Tosca, Are you gluten intolerant? If so, you've mentioned that you eat Ezekiel bread. What brand do you use? I'm assuming that the Food for Life brand isn't gluten free.

So glad I joined the challenge. It's made me realize I've probably been dealing with a mild gluten intolerance /wheat allergy for years.
It's so nice to have a fully functioning digestive system again!

I love Bob's Red Mill products! I enjoy a bowl of their organic extra thick oatmeal every morning with bee pollen, ground flaxseed, wheat germ, and chia seeds. I recently tried his gluten free oats and notice a difference in the way that I feel. I unexpectedly found the gluten free oats at a health food store in Toronto.
